Johanna Kissling's recipe book, Dumfries Museum, 2019

 

This recipe book belonged to Johanna Kissling. Inside its brown and blue leather cover are hundreds of handwritten and glued-in pages of recipes.

 

Dr Kissling kept this book along with more of his mother's possessions with him until he died.

 

Friends of Dr Kissling remembered him as having an appreciation for good food, developed during his days as a young aristocratic diplomat. One of his favourite foods was quince jelly which he rarely found on menus in Scotland.

 

Former Dumfries Museum curator, Elaine Kennedy remembered Dr Kissling teaching her how to make an omelette. She was beating the eggs when he stopped her, saying 'you must not torture the eggs!' He insisted that they were folded gently together instead. And, Elaine said, he was right!

Dr Werner Kissling (1895-1988) was a German photographer and ethnographer who spent most of his life documenting Scottish crafts, architecture, and agricultural practices. He was associated with Dumfries Museum from the mid-1950s until his death in 1988.
